Monday was a good day I started off finding the brake I was looking for locally so that was a huge relief. I did well all day maybe had 3 Zevias. I also had all of my supplements and stayed on teh diet otherwise. My breakfast was overnight oatmeal with berries and I had a local vegan wrap 1/2 for lunch and 1/2 for my snack from a local health food store. They are OMG so very good and healthy for you too!
I did have a beer at night. I decided to stay at home and leave tomorrow for trip. My wife had a rough day so I stayed home to be with her overnight and I made us dinner.
I made Stir Fry for Dinner:
Here is a shot of the prepared dinner:

Sunday was a TOUGH day I kinda went to shit! I had beer and several Zevias. But I still ended up loosing a lb.
I spent like 8 hours working on the brakes for a boat I just sold. It was a 10 min job that took forever. I got super frustrated and turned to beer I prob had a 6 pack today and about 6 Zevias.
My diet otherwise was on point. I had all of my supplements.
Coconut Quinoa for Breakfast.
Lentils and Sweet Potato for lunch. Thank GOD I had that ready to go:
This is the darn brake caliper that was causing all the problems:

Dinner
We had dinner at Cork a local restaurant. That went well my other buddy doing the 21 days with me was also there with his wife. We both chose the Coconut Bisque and the Beet Salad. Had I just stuck with that I would have been fine. However, I did have a few calamari and a few pieces of flat bread. I felt kind of blah in the AM.

Yesterday I was dying with the Brain Fog from no caffeine. Today was a bit better and when I felt it come on super hard again I broke and had a Zevia. Two Total for the day.
Breakfast
This morning I was excited to enjoy my pre made Overnight Oates. I included Golden Berries which we can get locally at Wegmans but they are not available very often, so I do enjoy them when they are in stock. Here is a quick video of my breakfast in bed:
Here is a picture of what was left. The jars are easy to clean!

Lunch
After breakfast I wanted to get a jump start on my meals so I decided to pre make my salads for the week. Here is the live video from my Facebook that I made showing how to pre make your Micro Green salads:
Therefore, that made lunch really quick and convenient to eat!
Pre Made Salads Ready to go!
Dinner
Meal Prepping went so well that in the evening when I was ready for dinner, I decided to make lots of extra Vegan SouthWest Rice & Bean Tacos. In addition, Here is another live video showing that meal prep as well:
Here is a picture of the dinner I had. They were awesome and I had several left over to pack. However, I can not seem to keep the tortillas together. For meal prep I just crushed up the tortillas and put them in the side container to keep them fresh. In conclusion, I am glad that I had 2 position meal containers for this!

Commit to the first 4 days of perfection and then I will see what is possible and can then determine how hard I am going to go at the remaining 17 days!
Here is my first Live facebook from this morning:
Next was breakfast and I had the Coconut Quinoa. It was sooooo very good! Way more enjoyable than the eggs. It may become a new staple in my diet! I also filmed that so here is that video as well:
After breakfast I had lunch it was just a Micro Green Salad and Miso Soup. In this video I mention how much I was struggling with the lack of caffeine. I recorded the Miso Soup to show how easy it is to make:
Here is a great picture from my Lunch Salad:

Dinner
Before dinner I had the Supplements which includes Power Greens. I think the Power Greens gets a bad reputation. Most people complain about how it tastes. I have learned to appreciate it. And I still do it as a 2-3 oz shot! Here is a short video about the Power Greens:
I am not going to lie! I got lazy for dinner and just went with Brown Rice and Black Beans with a little leftover Quinoa. It is basically a staple from Reset in a Crunch plan.
All in all it was a tough day. However, I focused on my goals and made it though!

Ultimate Reset Day #21 – It is the final day!! I’m so excited for the final weigh in and measurements tomorrow.
Meals
This morning I went with the fruit plate and yogurt once again using the same fruit combo as that is all I have left for groceries!!
For lunch I made the microgreen salad with an avocado. I was going to make the avocado soup but got lazy! It seems at this point I have completely let go of trying to follow the plan and am essentially just eating clean.
For dinner I made a stir fry with shredded potatoes, broccoli, and carrots and I threw in some baby bell peppers and a cup of black beans. I put in quite a few spices and the first bite packed a punch but it was delicious! However, I forgot to take a picture but it is in the video!
Closing Thoughts
The journey is over! Now it is time to collect my thoughts and reflect on these past three weeks.
Ultimate Reset Day #20 An exciting day! Only one day left to go!!
Meals
I started this morning with a fruit bowl and yogurt again. It worked well yesterday so why mess with perfection?! The Forager yogurt is growing on me.
I made another Asian stir fry for lunch and used some of the leftover brown rice from last night to go with it.
Today was busy and felt like having Shakeology as a mid-afternoon snack. The Reset has made me more aware that I may have a Shakeology addiction! I rarely go more than a day without it.
Dinner was a stuffed sweet potato with mixed greens, cherry tomatoes, parsley, and chickpeas. I know this is way heartier than the suggested dinner because I added chickpeas and all the dinners this week are strictly vegetables. However, I just feel like I am happy with the weight loss and don’t want to lose more. Therefore, I’m still listening to my gut when it comes to my daily food choices.
Still enjoying some comfort breakfast while on Ultimate reset, just substituting out regular for Vegan yogurt and topping with some fresh berries
Enjoying some fresh Asian Stir Fry with carrots, broccoli and snap peas.
Sitting and enjoying Shakeology in my blender cup.
Enjoying some sweet potato with chickpeas, cherry tomatoes, arugula, and avocado for dinner!
Closing Thoughts
I can’t believe there is only one more day to go! When I started the Reset I felt like three weeks was a fairly big undertaking. I am a free spirit and don’t like too many set commitments! The time has just flown by though. I think I am lucky I already eat like this so I know that made things easier. In addition, I have a feeling the time goes by quick for everyone the way the system is set up in one week segments.
